Quesadillas For Days

If your my net friend or friend in real life you know I have been having some digestive issues. It started a few weeks ago with shots of fermented pickle juice that made me feel sick for about 2 weeks after and not wanting to eat. Slowly I have gotten back to normal but have had to adjust my eating - like not to much spice, not to rich, low acid...Ugh all the good stuff is missing from my plate.

Lately though I have been making bean quesadillas (beanadillias?) to satisfy my gooey cravings. Guilty rich taste with vegan refried beans (store brand - 88 cents a can!) and Daiya. I go light on the hot sauce and then use a medium salsa and guac on the side. We have been eating them a lot lately and I serve them with different sides each time. One night I wanted lots of salt so I served them with corn chips. There are no rules here!



 My stomach is happy and maybe this fast recipe will make your stomach happy too!

[Recipe]
1 can of vegetarian refried beans
1/2 bag of shredded cheddar Daiya
5 wheat burrito sized tortillas
a smidge of Earth Balance or oil for pan
hot sauce, salsa, guac - if you feel like it.

I find assembling the quesadillas and then frying them easier. My pan holds 2 at a time and they are quick to make. Spread 1/2 of each tortilla with two tablespoons of beans, top with shredded cheeze, fold and press down, repeat till you are finished with all of them.
Heat EB or oil in a frying pan on medium heat. Fry each quesadilla till both sides are browned - about 2 minutes per side and then eat them. Simple right? Get fancy and add extras if you like!
